  1. Brown ground beef
  2. Finely chop the jalapeno, cut the carrots into 1/4" thick balls, cut the celery into 1/4", cut the potatoes into quarters or less.
  3. Melt 1 tablespoon of bacon fat in a skillet and sauté onion, jalapeño, bell pepper, and celery over medium heat until soft and golden. Add the garlic and cook for another 30 seconds or until the garlic is fragrant.
  4. Add the rest of the ingredients except the potatoes, along with the remaining tablespoon of bacon grease, and simmer for 6 hours.
  5. Add potatoes. If necessary, add more broth to desired consistency and cook on high heat for another 2 hours.
