- Add the potatoes (or cauliflower if you're making the healthy version), half of the pickle cubes, and enough water to cover the vegetables. Turn on the heat and when the water boils, add the chicken stock powder. Bring heat to medium.
- Simmer for 15 minutes or until carrots are easily pierced with a fork.
- Remove from heat and add about 6 cups of cold water. Use in a blender or pour into a blender and blend to your heart's content. Return the soup to the pot, add the remaining pickles, pickle juice and dill. Bring to a boil and remove from heat.
- In a separate bowl, add yogurt and 1/2 cup warm water and mix. Add this mixture to the soup and stir.
- Salt to taste, bearing in mind that it will smell better the next day.
- Drizzle with olive oil before serving
